Facilities
The facilities
we use at Independent Sensory Services are located in the Nutrition
Section of the Department of Food and Nutritional Sciences,
University College Cork.
The facility
is well-suited to the controlled sensory evaluation of food
and beverages by trained
and consumer
panels.
| Trained
panellists are screened for their sensory acuity,
trained on tasting principles and methods, and used to
describe test products in detailed sensory terms. |
| Consumers
panels, as referred to
here, have no experience of sensory analysis, are 'untrained'
and provide a hedonic reaction to the test products. |
There are
two separate panel tasting areas, containing five and eight
individual tasting booths respectively. The 5-booth tasting
section is connected by pass-through windows to the adjoining
test kitchen, while the 8-booth tasting area is located in an
adjoining room.
Both sensory
laboratories are equipped with: individual tasting booths, lighting
of variable intensity and colour, control of air temperature
and flow.
The laboratories
are also equipped with stand alone computer networks and data
collection systems. We use the Compusense
five sensory data collection software package which
enables reliable collection of sensory data and prompt reporting
of results to clients.
The facility
includes adjoining laboratory space for sample preparation.
A small
conference room is adjacent to the test booths and can be used
for panel training, focus groups and qualitative interviews.
Larger conference rooms are also available on Campus.
We are also
ideally placed to avail of the expertise and facilities that
the Department
of Food and Nutritional Science has to offer.

Clients
& visitors please note: When visiting us it
is correct sensory protocol to avoid using highly
scented items, such as perfumes, as these may
interfere with sensory panel work taking place
in the laboratory. Thank you in advance for your
